     早餐,还是早餐,上个星期勤快了一小下,呼啦呼啦好吃的就来啦!每次买了蓝莓就做玛芬,好像经常吃也想换换口味的,趁着还有蓝莓的时候赶快做。这款蛋糕太好吃,顶上的皮脆脆的,蛋糕又很松软,做法超级简单,早上提前一个小时起床,美味早餐就有着落了,当然成为我的保留配方。

白脱奶蓝莓早餐蛋糕Buttermilk Blueberry Breakfast Cake

Adapted from alexandra’s kitchen

材料:

  • 1/2 杯 室温黄油
  • 1 个 柠檬皮屑
  • 7/8 杯(等于3/4杯加2大勺) + 1 大勺 白糖(撒表面)
  • 1 个 室温鸡蛋
  • 1 茶勺 香草香精
  • 2 杯 面粉
  • 2 茶勺 泡打粉
  • 1 茶勺 盐
  • 2 杯 新鲜的蓝莓
  • 1/2 杯 白脱奶(没有可以用原味酸奶代替)

做法:

  1. 烤箱预热350F/180C。准备一个9*9的烤盘或类似的烤盘,抹油。
  2. 混合打发黄油,柠檬皮屑和7/8杯白糖,直到颜色变浅,松软,加入鸡蛋,香草香精混合均匀。
  3. 将蓝莓用1/4杯的面粉裹上;
  4. 将剩下的面粉,泡打粉,盐混合均匀。
  5. 将步骤4的面粉混合物和白脱奶交替的加入步骤2中的混合均匀,最后加入裹上面粉的蓝莓,拌匀。
  6. 将准备好的面糊步骤5倒入抹油的烤盘里,抹平,上面撒上1大勺糖。入烤箱烤35-45分钟,用牙签插入不粘就好了。冷却15分钟后就可以食用了。

 

 

Buttermilk-Blueberry Breakfast Cake

Serves 6-8

½ cup unsalted butter, room temperature
2 tsp. lemon zest or more — zest from 1 large lemon
7/8 cup* + 1 tablespoon sugar**
1 egg, room temperature
1 tsp. vanilla
2 cups flour
2 tsp. baking powder
1 tsp. kosher salt
2 cups fresh blueberries
½ cup buttermilk

* 7/8 cup = 3/4 cup + 2 tablespoons
** This 1 tablespoon is for sprinkling on top

1. Preheat the oven to 350ºF. Cream butter with lemon zest and 7/8 cup of the sugar until light and fluffy.

2. Add the egg and vanilla and beat until combined. Meanwhile, toss the blueberries with ¼ cup of flour, then whisk together the remaining flour, baking powder and salt.

3. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the blueberries.

4. Grease a 9-inch square baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan. Sprinkle batter with remaining tablespoon of sugar. Bake for 35 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. (Note: Baking for as long as 10 minutes more might be necessary.) Let cool at least 15 minutes before serving.
